Tarragon Chicken

Seasoning Mix
Mix these dry ingredients:
4 tbs salt
4 tbs almond flour (you can use cornstarch if you aren't watching carbs)
1.5 tbs superfine sugar or sugar substitute (I used allulose)
4 tbs dried tarragon
1.5 tbs celery salt
1 tbs smoked paprika
1 tbs onion powder or granulated onion
2 tsp garlic powder or granulated garlic
1 tsp ground turmeric
1 tsp black pepper
1/8 tsp cayenne pepper
 
I used this amount of seasoning mix for 14 lbs of chicken breasts
(2 Sam’s Club packages of fresh chicken breasts). 

We cut them up and freeze them in single serving size containers after they are cooked.  The kids love them.  We really like them too.  They heat very quickly in the microwave.

Slice each chicken breast in half lengthwise to make it thinner (or buy them already sliced).

Sprinkle light coat of seasoning over one side of each ½ chicken breast as you place it in a large bowl
Try to plan to use all the seasoning mix up in doing this.

When all the chicken breasts are cut and sprinkled on one side with seasoning mix, add 3/4 cup olive oil to the bowl of seasoned, sliced, chicken breasts and mix well.  (you could put these in gallon bags if you prefer that to a bowl).

Cover the bowl and refrigerate for 12-24 hours.

Take out of fridge and cook on the grill.

    I freeze loads of single servings, from my big batches, for those nights when I just don't have the time or energy to face the kitchen.
